Celiac Disease Four Times More Common Today Than in the 1950s

A study of the blood of Air Force recruits from the 1950s shows that gluten intolerance is four times more common today than it was when the samples were drawn. The study was led by Dr. Joseph Murray of the Mayo Clinic, who suggests that changing diet and way of processing food is the culprit.
